Veg Egg Bhurjji





Ingredients
2 tsp Green Chilies (finely chopped)
2 tsp Garlic (finely chopped)
1 large Onion (finely chopped)
1 cup of Cabbage (finely chopped)
1 cup of Carrots (finely chopped)
3 cups of Spinach (finely chopped)
2 cups of Mushrooms (diced)
6 Eggs
Dry spice powders
   1/2 tsp Garam masala powder
   1/4 tsp Turmeric powder
   3/4 tsp Coriander powder
   1 tsp Chili powder
   1 tsp Store bought Mutton masala powder
Salt per taste
3 tsp oil

Method
  • Heat oil in a skillet. Add garlic and chilis. Saute for 30 sec
  • Then add onions. Saute until onions are wilted
  • Then add cabbage and carrot. Cook for 2 minutes
  • Then add spinach and mushrooms. Saute for 2 minutes
  • Then add dry spices powders - garam masala powder, turmeric powder, coriander powder, chili powder and mutton masala powder. Mix well util well combined
  • Add salt per taste. Mix well
  • Add eggs. Stir until until eggs starts to thicken and no liquid eggs remain. 
  • Serve with steamed rice and Indian bread

Spicy Boiled Eggs



Ingredients

4 Eggs
1 tsp of salt + 1/3rd tsp (for sauteeing)
2 tsp Oil
1/4 tsp Pepper powder
1/2 tsp Red Chili Powder
1/4 tsp Turmeric Powder
4 Curry Leaves
1 Garlic Clove (crushed)


Method

  • Heat water in a vessel. Add a teaspoon of salt, so that it is easy to peel off the shells.
  • As water begins to boil, use a ladle to gently drop-off the egg in water. Cook for 5 minutes. Wash the eggs in running cold water and peel off the shells
  • Use a pizza cutter or a small knife to make vertical 4-5 vertical slits around the eggs and set aside
  • Heat oil in a pan, on extreme low heat mix pepper powder, turmeric powder, red chili powder, curry leaves, garlic and salt (1/3 rd tsp). Saute for 15 second. Now, set the heat on medium; add eggs. Toss them so that the spices are evenly coated. Continue to toss for a minute and turn off the heat
  • Serve it as an accompaniment. Prepare it as a snack for your kids lunch box and they will love it.

Egg Puff


Enjoy this mini appetizer made in just 30 minutes. This mini appetizer is  made from puff pastry and hard boiled eggs with onion filling. Yummy!!

Ingredients

4 Hard boiled eggs, halved
8 Pastry shells
1 Egg white

For onion filling:
1 Medium sized onion, diced
2 Garlic cloves, minced
1/2 tsp Chili powder
1/4 tsp Turmeric powder
1/2 tsp Coriander powder
1/4 tsp Garam masala
Salt
4 tsp Oil

Method

  • For onion filling-
    • Heat oil in a pan. Add garlic and onions. Saute on medium heat until it turns light brown. Reduce the heat, then  add chili powder, turmeric powder, coriander powder and garam masala. Add 2 tsp of water to avoid spices getting burnt
  • Preheat oven at 400 F
  • Place pastry shells on a greased tray. Apply egg white on each pastry shell. Top each pastry shell with a spoon of spiced caramelized onions and hard boiled egg. Place in oven at 375 F for 20 minutes. 
  • Serve hot

Egg Salad


Turn boiled eggs to a salad which is deliciously creamy, chunky and tangy. This salad can be used as sandwich spread ,sandwich filling and as a cracker spread which is perfect for a brunch. It is normally served as a cold salad which rich in protein and carbohydrates. 

When I was studying and working, this salad was a perfect meal because it is quick and easy to prepare.  And off-course highly economical !!

Ingredients

2 Boiled eggs, finely chopped
1 Stick of Celery stalk, finely chopped
2 tsp Yogurt
1 tsp lemon Juice
Salt
Pepper
Few sprigs of Cilantro, finely chopped

Method

  • Mix all the ingredients and season it with salt and pepper

  • Serve it with toast or spread it on cracker. Garnish with green onions
  • Can be refrigerated for future use
Note: Instead of yogurt mayonnaise can be used.

Tomato Egg Curry

Tomato Egg Curry is a spicy curry with boiled eggs cooks in tomato puree and a mixture of different spices. 

Boiled eggs is an easy ingredient to work with. They can be used in variety of dishes; it can be sauteed, or used in salads or deep fried or even dunked in curries. The other ingredient is tomato which is used in most of the dishes. And the combination of eggs and tomatoes works pretty well. 

 I created this dish using boiled eggs and tomato as primary ingredients. I made this recipe on a rainy day.  You can save this recipe for monsoons because tangy taste works well on a chilly day. 


Tip-
You can prepare the sauce in advance and soak boiled eggs 15 minutes before serving. The gravy tastes best when it is served following day


Ingredients

12 Boiled eggs, peeled and slit in middle
1 small piece ginger, finely chopped
1 Onion, finely chopped
1 tsp Mustard seeds
1/2 tsp Cumin seeds
1/4 tsp Fenugreek seeds
Marble sized Tamarind
2 tsp Sambhar powder 
(or )
1 tsp Coriander powder
1/2 tsp Red Chili powder
1/4 tsp Turmeric powder
1/4 tsp Cumin powder
Salt
2 tsp Oil

For the puree
5- 6 Tomatoes
1 tsp oil
1 bay leaf
1 Star anise
1/2 tsp Fennel seeds
2 Cloves
1 stick of Cinnamon

Method

  • Puree tomatoes using a blender. 
  • In a large pot, heat oil, add star anise, bay leaf, fennel seeds, cloves and cinnamon. Then add tomato puree. Simmer for 5 to 10 minutes. Keep it aside

  • In a small bowl, heat tamarind and water. Extract pulp and filter it. Discard its contents.
  • Add sambhar powder to tamarind and mix well

  • In a large pot, heat oil, add mustard seeds, cumin seeds and fenugreek seeds. when it starts to crackle add ginger and onions. Saute in medium flame until onions turn brown

  • Add tamarind and tomato puree. Adjust salt as per taste. Simmer for 15 minutes 

  • Add boiled eggs and simmer for 5 minutes

  • garnish with coriander and serve hot with steamed rice

Boiled Egg Masala Dry

This is an easy party appetizer made effortlessly. Boiled eggs are spiced up with basic ingredients which are easily available in your pantry. 

We had our friends over weekend for dinner and I was planning for an easy starter. As I was in no mood to chop vegetables besides I was making several other dishes I decided to make this recipe.




Ingredients

Boiled eggs 6, peeled and cut in half
1/2 tsp Mustard Seeds
1 sprig of Curry leaves
1 tsp Chickpea flour
1/2 tsp Red Chili Powder
1/4 tsp Chat Masala
1/2 tsp coriander powder
1/4 tsp Turmeric Powder
1/2 cup of water
1/2 tsp Salt
3 tsp Oil

Method

  • In a flat pan, heat oil. add mustard seeds and curry leaves. Add chickpea flour, red chili powder, chat masala, coriander powder, turmeric powder, salt and water with constant stirring for a minute


  • Now gently place eggs. Keep in low heat for 5 to 10 minutes and turn each side occasionally

  • Serve it as a starter

Poached Egg Curry

Easy curry recipe for roti, paratha, chapathi or rice. The recipe is simple, yet it is a comfort food !!
The egg curry recipes vary across regions with different styles. The recipe below is onion- tomato based which forms the base for the gravy and the eggs are poached in gravy.


Ingredients

6 Eggs
1 Onion, diced
2 Tomatoes, diced
4 cloves of Garlic, minced
1 tsp coriander powder
1/2 tsp Red chili powder
1/4 tsp Garam masala
1/4 tsp Turmeric powder
2 tsp Oil
Salt

Method

  • In a pan, heat 1 tsp oil, add onions and fry until it turns brown

  • Add tomatoes. Saute until tomatoes are completely cooked

  • After onion-tomatoes have cooled. Grind it into smooth paste
  • In the same pan, heat 1 tsp oil, add garlic, coriander powder, red chili powder, garam masala, turmeric powder and add 1/4 cup of water


  • Add tomato -onion puree. Adjust salt as per taste. Simmer for 5 minutes

  • Break the eggs and pour it in gravy one beside the other, while the gravy simmers

  • Cook eggs in low heat for 10 minutes without stirring.
  • Turn off heat garnish with cilantro

  • Serve hot with steamed rice or roti

Motte Palya | Fried Eggs

Boiled eggs sauteed with taco seasoning. Its a great snack and a very good appetizer. Its rich in proteins. 

Egg yolks can be discarded if you don't use it.




Ingredients

6 Hard boiled eggs, diced
1 Onion, finely chopped
1 clove of Garlic, minced
3 sprigs of Green Onions, finely chopped
1 tsp Taco seasoning
Salt
4 tsp Oil

Procedure

  • Heat oil in a pan, add garlic and onions. Saute until onions turn transparent
  • Add taco seasoning and salt
  • Add hard boiled eggs and toss in high heat setting. And fry for 2 minutes
  • Turn off flame and add green onions
Tip-
  •  If you don't have taco seasoning then you can use combination of - 1/2 tsp  Cayenne pepper, 1/2 tsp red chili powder, 1/2 tsp cumin powder, 2 tsp coriander powder, 1 tsp smoked paprika, 1 tsp oregano, and salt
